| 10.30am | Picture freshly caught seafood consumed right by the crystal clear blue seaside. The delicate suns rays tickle your face and warm you heart and soul. A gentle breeze carries the sweet aroma of wild herbs from the mountains nearby. Match the food to the imagery, with the dishes I grew up with on Psara including gemista mussels and plaki. |

| 10.30am | The 1st of May in Greece is Labor day and the Feast of the Flowers. A celebration of flowers stemming from the ancient festivals of the goddess Demeter. Picture parades, feasts, skies filled with colourful and spectacular kites to welcome Spring and beautiful flower wreaths hung above doors and on balconies for good luck and to ward off the evil eye. We will celebrate May day by preparing colourful dishes including Autumn vegetables dressed with a Santorinian caper dressing, goat & pine nut dolmades, herbed yoghurt dip and baked apples with Commandaria. |

| 10.30am | Picture a lush island filled with colourful pistachio trees surrounded by deep blue sea. Fine neoclassical buildings and narrow alleys where you can enjoy fresh seafood and pistachio sweet delights. An impressive cathedral in the centre the island to honour Aghios Nektarios, oversees the production of pistachios and ensures they are the best in the world. Dishes include pistachio baklava and pistachio crusted solomo. |
