When Raquel opened in Oxford Street over 27 years ago, her cooking included a lot of the French influences from northern Spain. As the Australian palate broadened and evolved, she was able to introduce the bolder, stronger flavours of the coastal regions and the Mediterranean.

By the mid eighties, Spanish cooking had gained a following and her restaurant Ole Madrid in Oxford Street received a gong from Cheap Eats for its rustic cooking and no-holds-barred flavours.

In 1995, she handed her apron to Fernando (son) and Maria (daughter) and left them to their own devices, well-equipped with all her cooking skills and food knowledge.

Fernando and Maria are now showing off their latest tapas, taking ideas from their extensive travel to Spain and abroad and their visits to modern Spanish tapas bars in Spain and marrying them with the traditional recipes handed down from their mother, Raquel.

While Raquel still works the front-of-house and is still charming her guests with her personal touch, Fernando and Maria are turning out some of the most palatable modern and traditional Spanish cooking in Sydney.
