If the thought of Indian Food conjures up images of overly spicy food that's likely to leave you breathless, you have obviously never been to Zaaffran. Here you will find perfectly balanced dishes that will take your breath away, but for a very different reason. Every dish is crafted with respect and reverence by a passionate kitchen team led by Chef and Part-Owner Vikrant Kapoor, who has worked at the finest five-star properties in India as well as the world-famous Raffles Hotel in Singapore.

Vikrant Kapoor says, “Our mission is to prove that Indian cuisine can be as subtle and finely balanced as any of the world's greatest cuisines. There is a wealth of culinary treasures locked up in India, mostly in royal gharanas (households), where recipes are treated like heirlooms and handed down from generation to generation. We focus on recipes gleaned from such households rather than on the stereotypical repetition of dishes from commercial cookery.”

Whether it be a simple hawker-style dish or the finest creation from a Maharaja’s kitchen, all dishes are served with contemporary flair. Vikrant Kapoor has the uncanny ability of transforming a favourite dish into a work of art with a touch of his own alchemy, all without abandoning the traditional methods of Indian cooking.

Zaaffran’s menu does have a few traditional favourites, but most of the dishes are unique: for example, lobster curry, baked salmon, tandoori baby snapper, spatchcock, biryani baked under a flaky pastry or prawns marinated in rose petals.

Zaaffran has great harbour and city skyline views but, once the food arrives at your table, you will scarcely glance at the waterfront. There will be oohs and aahs heard as everyone digs into the fabulous dishes while the views become secondary.

Most people feel that only beer goes well with indian food, but Zaaffran’s well-trained waiters will be glad to recommend spice-friendly wines such us gewurztraminer, pinot gris, marsanne, riesling, zinfandel/primitivo, grenache and merlot from the extensive wine list.

There should be a sign at Zaaffran’s entrance that says: “Please leave behind your preconceptions of Indian food." Only then could one truly understand and appreciate the magic of Zaaffran.
